What is kimchi?

Kimchi is Korea's national dish: spiced, fermented vegetables eaten with almost every meal.

Napa cabbage, ginger, garlic, Korean chili: over a few days, fermentation brings them together into one deep, layered flavor. Tangy, spicy, crunchy. And a little different every day, because it's alive.

Why fermented?

Fermented foods have been part of the world's kitchens for centuries, from sauerkraut to kefir. During fermentation, living microorganisms do the work: that's where kimchi gets its tang and its depth.

We want to bring this old knowledge back to the everyday table. A little harmony on your plate.
